This is a new take on cauliflower that feels healthy but hearty at the same time. It’s a great side dish at your next holiday meal or potluck. Feel free to get creative with herb toppings!
Ingredients
1 large head of cauliflower, sliced into thick slices vertically (4-5 slices)
1.5 tbsp olive oil
¼ cup crumbled feta
½ lemon juice (or more if needed)
¼ cup chopped fresh herbs (try mint, basil, dill)
3 walnuts, crushed or chopped
5 olives, sliced
Directions
Slice cauliflower head into 4-5 thick slices, slicing vertically from top of the head to the stalk. Brush with olive oil to cover each side of each slice. Salt and pepper the slices and broil on each side for 5 mins until browned. Arrange on a plate or tray and squeeze lemon on slices, sprinkle feta, walnuts, herbs, and olives over the top. Serve warm or room temperature.
