This week’s we’re featuring a seasonal TJ’s gem: Cut Spaghetti Squash! Spaghetti squash is a delicious and filling noodle sub that is mild in flavor and a great base for a heavier sauce, such as our Balsamic Bolognese. It peaks with the winter vegetables and is just coming into season, so we are trying to eat as much as we can while it’s at its prime, particularly as the weather cools down and comfort food sounds more appealing. Spaghetti squash is also low in carbohydrates and calories, so it’s a great choice for bulking up and building a satisfying meal. It also is rich in vitamins (particularly A, C and folate) and minerals (calcium!).

And while we love this filling noodle sub, it can sometimes be clunky to prep. TJ’s has come to the rescue (per usual) and prepped it into manageable pieces that can be easily cooked in the microwave and then shredded into “noodles” with a fork. Top with some homemade turkey meat sauce, a sprinkle of parm and enjoy!
