This week we wanted to explore elsewhere and found a conveniently assembled option at Safeway! Cauliflower is our best friend and it happens to be beautifully paired with a great protein source, chickpeas (don’t mistake them for green peas)! Even though cauliflower is not part of our traditional set of green veggies, it packs a bunch of nutrients. On top of being a great low-carb alternative, cauliflower is rich in choline which helps promote brain development and a healthy immune system. Furthermore, it also has an abundant supply of antioxidants such as carotenoids, flavonoids, and Vitamin C to help combat against heart disease and cancer.

On the other hand, chickpeas are a great source of plant protein as they are rich in both protein and fiber. Consequently, they help keep our appetite at bay as they work hand in hand to slow down digestion in order to induce the feeling of satiety. Additionally, chickpeas are high in manganese and folate which help support bone development and new cell growth respectively.

The Cauli-Rice Curry Nourish Bowl clocks in at 260 calories while packing in 9 grams of protein and 8 grams of fiber. Because it is also plant-based, it accounts for 20% of our daily value of potassium! As filling and delicious as it is, be wary of its moderately high sodium and sugar content so the Nourish Bowl would be a good occasional option if you’re on the go or on a time crunch!
