Recipe Challenge: Carrot Cake Overnight Oats

This recipe adds some extra fiber from carrots but with the seasonings of a popular dessert. We hope you try it out and like it as much as we do!

Ingredients:

1/3 cup rolled oats, uncooked

1/3 cup unsweetend vanilla almond milk

1/3 cup 0% Greek yogurt

2 tsp chia seeds

1/3 cup shredded carrots

1/2 cup blueberries

1 tbsp crushed walnuts

1-2 tsp vanilla extract

A pinch of nutmeg

1/2 tsp cinnamon

Directions:

Mix all ingredients together into a bowl or mason jar and let sit in the fridge for at least 4 hours or preferably overnight. Enjoy!

Nutrition facts: 285 calories, 10g fat, 10g fiber, 39g carbs, 12g protein
