Recipe of the Week: Asian Cabbage Slaw

This is a great dish for a potluck or summer barbecue and is always a crowd pleaser. It’s light, filling, and goes with any protein. It’s all ready to eat and basically involves minor chopping and assembly. Play around with the soy sauce/rice vinegar amounts per your liking.

(Makes about 5-6 cups)

Ingredients:

3 cups red cabbage (about ½ head)

2 cups savoy cabbage (about ½ head)

2-3 tbsp low sodium soy sauce

3-4 tbsp rice vinegar

1 inch piece of fresh ginger, chopped

½ cup sliced almonds

½ bunch scallions, sliced

¼ cup chopped fresh cilantro

½ cup 2% Greek yogurt

1-2 tbsp sambal olek (chilli paste), optional

 

Directions:

In a large bowl combine all ingredients and toss to combine. Should be slightly creamy and tangy. Add salt and pepper if needed. Use chili paste to desire spiciness. Serve and enjoy!
