Recipe Challenge: Strawberry-Banana Breakfast Quinoa

This easy breakfast recipe is sure to satisfy you on colder days. You just need around 20 minutes to have this ready for the next three days. You can also get creative with this recipe and add some spices!

Serves 3

  • ½ cup uncooked quinoa
  • ¾ cup unsweetened coconut milk (bottled)
  • 2 tablespoons water
  • 1 cup sliced strawberries
  • 1 cup sliced banana
  • ¼ cup unsweetened flaked dried coconut

Place the quinoa in a fine sieve and place the sieve in a large bowl. Cover the quinoa with water. Using your hands, rub the grains together for 30 seconds; rinse and drain the quinoa. Repeat the procedure twice. Drain well. Combine the quinoa, coconut milk and 2 tablespoons of water in a medium saucepan and bring to a boil. Reduce the heat and simmer 15 minutes or until the liquid is absorbed, stirring occasionally. Stir the mixture constantly during the last 2 minutes of cooking. 

Place about 2/3 cup of the mixture in each of 3 bowls. Top each serving with 1/3 cup strawberry slices, 1/3 cup banana slices and about 1 tablespoon coconut. Serve warm.
