Spicy Sriracha Tuna Stuffed Sweet Peppers

Yields 1-2 servings
Ingredients
- Mini sweet peppers cut in half
- 1 can of tuna (4 oz) in water, drained
- 2 tsp sriracha, more or less to taste (choose sugar-free sriracha such as this one for VLCD)
- 2 tbsp greek yogurt or mashed avocado
- ¼ cup onion, diced
- ¼ cup celery, diced
Instructions
- Combine all ingredients in a large bowl until creamy and mixed thoroughly.
- Fill pepper halves with the tuna mixture and enjoy!
Notes
This can also be a filling in a lettuce wrap, or for Stepwise/Maintenance low carb tortillas. This also makes a delicious dip for cucumbers, celery, peppers, carrots etc.
