Grocery Spotlight: Root Vegetable Hash Browns

Breakfast is the most important meal of the day, they say, right? Well, sometimes it can feel like breakfast is the last thing we may want in the morning. It’s way easier to press the medium-sized cup icon on the Keurig, grab a granola bar or munch on some fruit in the morning. However, especially in the morning, it is crucial to provide our bodies with substantial protein and fiber to help balance our intake throughout the rest of the day.

Put the fun AND delicious back into breakfast!

Here comes a product grown on the luscious farms of Skagit Valley, Washington, Cascadian Farm Organic Root Vegetable Hashbrowns. Now, your first thought may be similar to mine in asking, since when are hash browns healthy? Let me tell you how genuinely surprised I was about how these light hash browns have only three ingredients and pack an awesome natural flavor; featuring some of our favorite vegetables: carrots and sweet potatoes (both organic). The serving size is one cup, but we would recommend a ½ cup serving as a fun weekend breakfast treat that also provides some great health benefits.

Half of a cup has: 

  • 30 calories
  • 0g of added sugar
  • 10mg of sodium: 1% of your recommended daily value (DV)
  • 1g fiber: (3% DV)
  • 175mg of potassium: (4% DV)

We love the high amount of potassium per package (32%DV), as it is often a deficit mineral in our diets even though it is extremely important for our health.

These hashbrowns don’t weigh you down, figuratively or literally speaking. They are fluffy and airy but also filling. We would recommend this product for our Stepwise patients as a solid brunch option if you want something to replace traditional hash browns once in a while. For VLCD patients, please wait until your maintenance phase to try these out and speak to your RD for more options.
