Grocery Spotlight: Trader Joe’s Mexican-Style Riced Cauliflower

We love riced cauliflower! It’s a low calorie, low carb way to enjoy the comforting texture of rice, but without the—ahem—rice. Okay, so it’s not a perfect substitute, but we think it’s pretty darn close!

Surely you’ve tried riced cauliflower before, but have you tried Trader Joe’s pre-seasoned Mexican Style riced cauliflower? Spicy, aromatic, and insanely flavorful, this simple staple is sure to brighten up any burrito bowl or Latin-inspired dish. It’s basically a shortcut for making this skillet taco cauliflower rice. Aside from cauliflower, a bag of this stuff contains tomatoes, tri-colored bell peppers (red, yellow, and green), pickled jalapeños, and some spices and herbs. 

Full Ingredients: Cauliflower, Tomatoes, Red Bell Peppers, Yellow Bell Peppers, Green Bell Peppers, Water, Pickled Jalapeño Peppers (Jalapeño Peppers, Water, Alcohol Vinegar, Salt, Calcium Chloride, Turmeric Oleoresin [color]), Cilantro, Extra Virgin Olive Oil, Pepper, Cumin, Garlic Puree.

Nutrition Facts (per 1 cup frozen, about 4 servings per bag): 50 calories, 2.5g fat, 330mg sodium, 5g total carbohydrate (1g fiber, 2g sugar, 0g added sugars), 2g protein

Try it roasted if you like your cauli-rice on the dry and crispy side: spread frozen rice on a nonstick or lightly oiled pan, roast in the oven at 400°F for 10 minutes. Flip the rice and re-spread it using a spatula. Roast for 15 more minutes until some pieces are slightly browned. Enjoy!
