Grocery Spotlight: A Dozen Cousins Beans

While I love to cook, I am always on the lookout for something quick to keep on hand for those times when I haven’t meal prepped or am short on time. And these Dozen Cousins beans are just the thing. I like that they are prepared with minimal ingredients and additives while providing a healthy dose of protein and fiber. Per container, they range from 170-320 calories making them a great addition to any diet.  

The beans come in several varieties and flavors- my favorite being the Trini Chickpea Curry. I like to jazz up the packaged meal by mixing in spinach and topping with an egg, a little yogurt, and some chopped green onions to make a quick but balanced meal. I also love the Cuban Black beans topped with avocado and yogurt, the Mexican Cowboy pinto beans as a side for taco night, and the Creole Red beans with a side of farro for a complete Southern-style vegetarian meal. Lots of possibilities!
