Recipe of the Week: Marinated Tofu and Veggie Wrap

This recipe makes for an easy on-the-go meal that can be served hot or cold. Balsamic vinegar adds a deep, rich flavor to the ingredients and will take some prep time to marinade to allow the flavor to sink in. Try this sweet and savory vegan wrap loaded with plant based protein and heart healthy omega-3’s.  

Prep time: 1 hour 10 mins

Cook time: 5 mins

Ingredients:

Makes 1 servings

3 tbsp Balsamic vinegar

1 tsp Olive oil

3 tbsp Paprika

¼ Zucchini or yellow squash

2 Asparagus spears

¼ Red bell pepper

¼ Avocado

¼ Extra firm tofu

1 Low carb high fiber La Tortilla Factory wheat tortilla

 

Instructions:

Cut zucchini and red bell peppers and tofu into long matchstick strips. To make the marinade, mix balsamic vinegar, olive oil and paprika in a mixing bowl. Place zucchini, asparagus, bell peppers and tofu in marinade for one hour, mix contents around at 30 mins. Grill veggies and tofu until tender. Slice a few pieces of avocados. Place tofu, 2 slices of each veggie and avocados in whole wheat tortilla and wrap. Can be served cold or hot.
