Recipe Challenge: Savory Protein Pancakes

This is a nutrient-dense pancake if I’ve ever seen and eaten one: chock full of spinach, held together with egg and coconut flour, with a bit of ham in every bite. Two would make a great VLCD meal, or if snacks are on your plan, one would be a fantastic after-workout option. Feel free to change the seasonings from soy sauce in this version (it was originally an egg foo young recipe) to an herby version, with 1-2 teaspoons of oregano, basil, or thyme. If eating these as a meal, a fresh salad of greens, cucumber, and tomatoes will fill out your plate.

Savory Protein Pancakes

Adapted from Nom Nom Paleo

Yields 8 patties (4 servings)

Ingredients

  • 6 large eggs
  • ¼ cup coconut flour
  • 1 tsp soy sauce
  • ½ tsp apple cider vinegar
  • 1 cup diced ham
  • 10 oz frozen spinach, thawed and squeezed dry
  • ½ tsp baking soda
  • Black pepper to taste
  • 1 tablespoon coconut or grapeseed oil for cooking

Instructions

  1. Whisk together the eggs, coconut flour, soy sauce and apple cider vinegar until smooth. Alternatively, use a blender to ensure there are no lumps. Stir in ham, spinach, baking soda, and pepper.
  2. Heat ½ tablespoon grapeseed or coconut oil to medium heat. Scoop ¼ cup of batter onto skillet and flatten into patties. I recommend cooking 4 at a time. Let cook for about 3 minutes or until golden brown, then flip over for another 3 or so minutes. Let rest on a paper towel to soak up any oil. Add remaining ½ tablespoon of oil to pan and heat. Cook the remaining 4 patties.
