2 coarsely chopped tomatoes
1 cup minced scallion or white onion
1 clove garlic
Juice of 1 lime
Salt and pepper, to taste
1 stemmed and minced jalapeno, to taste
½ cup cilantro, additional to taste
- Combine all ingredients but cilantro and taste. Add additional salt, pepper or jalapeno to taste.
- Stir in ½ the cilantro and allow to sit for 30 to 60 minutes.
- Adjust seasonings, garnish with remaining cilantro and serve.
